Cacao & Goats’ Yogurt Truffles
A high fat and protein dessert or snack!
If you have read my previous blog, you will see I am a huge fan of goats’ yogurt, while also a lover of cacao. A friend introduced me to the brilliant idea of goats’ yogurt with cacao powder to make truffle balls. The only sweetness this recipe uses is 2 - 3 tbs of maple syrup, it is so easy and the perfect treat with a coffee or even a pre-workout snack. The goats’ yogurt is a good quality source of protein and the cacao powder (I use organic) offers a healthy dose of antioxidants (molecules that fight free radicals in your body, essentially prevent cell damage) and the small amount of maple syrup gives it a slight sweetness while keeping blood sugar levels down.
Recipe/Method:
Mix 1/2 tub full fat goats’ yogurt (I use St Helen’s Farm Natural Goats’ Milk Yogurt) with 1 cup cacao powder in a glass bowl. You want the cacao powder to be fully mixed in but not sloppy. If the consistency is too wet add more cacao powder, you are looking for thick like-dough consistency.
Add 2 -3 tbs maple syrup (start with less you can always add more) and a pinch of pink salt.
Once you are happy with your mixture, take a smaller bowl and put 1 - 2 tbs of cacao powder in.
Then roll the mixture into small balls and coat in cacao powder from the smaller bowl..
Leave the balls in a container in freezer to set.
Keep the truffles in the freezer and pull out as and when. These will last for months in the freezer.
*I like to sprinkle a few cacao nibs to finish (optional).
